- Introduction to Meat Cutting

NOON- Lunch

12:45 PM - Suit Up Beef Fabrication & Fabricate the Forequarter

1:30 PM- Fabricate the Hindquarter & Value Added Cuts

5:30 PM - Buses leave for dinner
